You may recall from a previous post that a study showed grinding chia seeds leads to better omega 3 blood levels than consuming them whole. So this recipe is made in a blender or food processor so the seeds are ground, and then the mixture is left overnight to thicken.
This is a nice grain-free start to the day – providing fiber, omega 3 fats, and some protein. You can make it yours by adding your favorite add-ins and toppings. Guess what is on mine today – red currants! We got back to the US and my hubby went shopping and found red currants for me! We rarely see them here in the US. Made me happy!
